It’s been a freezing cold Wednesday in Northumberland and I, for one, did not want to leave the warmth of home. So what did I do?
Sleep in and miss breakfast (oops) so I abandoned all chances of making my afternoon gym class due to lack of food and energy and decided to do some baking!
Naturally – my decision to bake was very spur of the moment, so I definitely hadn’t got the puff pastry out of the freezer to defrost (another oops).
As Mary Berry would shudder in shame, I did a quick defrost in the microwave. I am very much a lazy baker so didn’t want to do anything complicated with my pastry. So I quickly grated some cheese and rolled it into the pastry to make some easy cheese twists!
I did make a little bit of an effort by cutting up some bacon to wrap around a few of my twists! Thankfully they came out crisp, fluffy and cheesy!!
Using a handful of my cheese twists, a chopping board and a cup to attempt to make my cheese twists look as instagrammable as possible
The cheese twists with bacon were BY FAR my favourite! The saltiness from the bacon added so much more flavour to the twists.
I love baking but I think I’m going to have to venture into some healthier alternatives as I get bikini body ready for my holiday at the end of May!
It’s Easter Sunday!! Hope everyone has enjoyed drinks and as many Easter eggs as they could handle in one sitting!
I love Easter as it always brings my family together for a slap up meal and a good time, just like Christmas. This year I’ve spent it at my uncle’s in Hexham – which is excellent (or should I say eggsellent) news as he is a fab cook!
After a busy day of attempting to hit a golf ball at the driving range and constant car park space hunting in Tynemouth yesterday with James, I’m happy to have had a comfy and relaxed Sunday with the family.
I decided a loose fitting top was a must, so I went for my trusty stripy knit top – anything comfortable and stripy is good in my books! I paired this with some skinny jeans and my hand-me-down Barbour, thanks the the good ol’ British weather!

The meal was cracking – as always – as we had lamb, potato gratin and broad beans followed by as many cakes as we could possibly fit onto the table. We followed our feast with a soggy walk to Hexham’s daffodil fields and back to the house – it’s safe to say I should have remembered to at least bring a hat with me as I got totally soaked!! (So excuse my very wet, very scruffy dry shampooed hair)
But despite the diet being in ruins and catching a sniffle from the rain, I have had a brilliant Easter and I hope everyone else has too!
April is here! The weather is finally starting to perk up from the constant rain in Northumberland and I personally can’t wait to break out the summer wardrobe!
Yesterday was the last day of my 6 week challenge and… I didn’t lose a stone. I lost 5lb however, the gym instructor says I didn’t lose the rest of the weight as I’ve built up my muscle but I’ve actually lost a total of 19 inches around my body! So regardless of my weight I feel SO happy!
I’m going to carry on the gym and hopefully lose more inches in time for my holiday at the end of May. Time to smash those gym classes and start stocking up on holiday clothes!
