3/6 Weeks & A 1001 Day Challenge

I’m 6 pounds lighter!!

So I’m roughly half a stone lighter, which I am so thrilled about as I am bang on target to reach my goal of losing a stone. Fingers crossed that the next six weeks are just as successful.

And now I’ve started a new challenge as well as my weight loss challenge!

Today marks the start of my ‘101 things in 1001 days’. I have written a list of 101 things which I am to complete in the next 1001 days, ending in December 2019!

I felt inspired while reading another blogger’s list and decided to give it a go for myself!

To yet another striped item of clothing!!

Yes, again I have caved and bought myself a new stripy garment, but this time I’ve ventured out of the breton world and bought a shirt!

Well.. a popover shirt, but it still counts!!

I’ve recently had to curb my spending which is slowly killing me inside (as well as the no donuts for 6 weeks, why did I decide strict dieting was a good idea?!) so this little purchase has perked me up a tad.

Here’s to saving to learn to drive and ~potentially~ funding college supplies, WOO!

5 Days In..

If you’ve given my previous blog post a read, you’ll know I’m doing a ‘6 week weight loss challenge’ during which I have to aim to lose a stone in weight.

For someone who adores food and is somewhat of a pig, I thought I was about embark on a huge struggle of craving burgers and donuts nonstop and struggle to come to terms with the fact I need to shift my bum from watching Loose Women to getting out and going to get some exercise.

I’m now 5 days in – not far, I know – but so far I’ve not dove into a bag of sugared donuts or ate a million bars of chocolate and I’ve actually not wanted to! Though I’ve mainly eaten chicken and salads this week, I’m actually enjoying eating healthier!

With the 6 week challenge I am on, I am supposed to calorie count and stick to around 1200-1400 a day and go to at least 3 exercise classes a week; one HiiT class, one toning class and one cardio class. 

So far I’ve been on the lower side of the calories, sometimes a little below so I need to work out how to make my meals and snacks stretch out to at least 1200 calories. I’ve managed two classes this week; legs, bums and tums (toning) and piloxing (a mix of standing pilates and boxing, cardio) and completed an at home HiiT session.

Honestly, I’m feeling exhausted but healthier! Sometimes a panic Slim Fast shake and spag bol are purchased as a quick work break meal – but that’s okay! I just need to get in the swing of balanced meals and exercising!

6 Weeks Until My Next Donut

At the beginning of this month I wrote about the end of January, the end of my ‘trial month’ but that trial month seemed to slip a little into February..

After a massively unhealthy month with lots of drinking and meals out, I embark on a health kick.

I have officially signed up for a ‘6 week weight loss challenge’. For the next six weeks I’ll be on a fairly strict diet and exercising my heart out! Hopefully at the end of those six weeks I’ll be a stone lighter and a lot happier with my body.

Maybe this is what I need to really start my beach body! Here’s to all the avocados and sweaty gym classes! (And to the box of Krispy Kreme donuts at the end of it)

2017’s Trial Month is Over!

Hello February!
Now that January (what I call the ‘trial month’ of each year) is over I can really start to focus on reaching for my goals for the year!
I welcomed January with illness, little body confidence and a clear mind. I set out goals, had fun and reached some smaller goals – like helping set up a window display at work!

But now it’s time to start buckling down and figure out how I’m going to go about my year. 
This month, saving money seems like the impossible with nights out for birthdays and leaving dos, Valentine’s day, a year of being with James and so much more. However, I’m going to really start with eating better, hopefully more exercise if my back will ever allow it and maybe even the purchase of my provisional driving license!

Spaghetti Bolognese with Butternut Noodles

As you may know, I’m on a little bit of a(n unsuccessful) health kick. I’ve been exercising more and trying to eat better so that I can actually feel more confident when I look in the mirror.

After a month of no wine (plenty of gin and tonics, though), less chocolate and sugary snacks and many Weight Watchers ready meals, I’m feeling a tiny bit healthier. But I want to make a change to the meals I cook too. I LOVE carbs so cutting down on pasta and potatoes is proving to be a struggle.

As I was browsing my local M&S salad and veg section for some health kick inspiration, I caught my eyes on the butternut noodles. I’ve always like the idea of spiralised veg as a dupe for spaghetti ever since it became a craze but have never gave it a go until tonight.


I thought I’d keep it simple and do my take on a spaghetti bolognese.

I used:

  • 400g lean mince
  • Red, green and yellow peppers, half of each
  • 4 cherry tomatoes, halved
  • 4 mushrooms, chopped
  • 400g passata
  • Teaspoon of Lazy Chilli flakes
  • Teaspoon of Lazy Garlic
  • 2 veg Oxo cubes
  • 1 beef Oxo cube
  • Sprinkle of Moroccan spice
  • Pinch of salt
  • 2 packs of butternut noodles
  • Grated cheese, to top


Once the mince has browned with the garlic and chilli (if you are a lazy chef like me, I seriously suggest you check out the Lazy range! It’s available at most supermarkets!), I throw in the veg and crumble one of the veg oxo cubes. After I’ve given that a stir, I add in the passata. I mix in the other veg oxo cube and the beef oxo cube in a mug with some boiled water – just as if it were a cup of tea – and throw that in the pan after about 3-5 minutes and let it boil down a little. I then add the pasta to the sauce when it’s done and top with a bit of grated cheese (I refuse to give up the cheese).

This was the first time I had swapped pasta for a veg substitute and, I must say, it was fairly successful. Though the slight crunch at first was a bit strange, I sharply got used to it and enjoyed my meal.

The butternut noodles were tasty and tricked me into thinking I was getting those naughty carbs when I wasnt! I think the trick is what you eat with these noodles, as I don’t think it would’ve tasted as well if they had been paired with a sauce without a tomato base.

Think the courgette spaghetti is the next one on my list to try! Who knows, I might even invest in my own veggie spaghetti maker. If you have any tasty recipes I can pair with veg spaghetti, let me know! 🙂

‘Rustic’ Cheese Scones

After a morning of doing HIIT via a YouTube instructor – I literally couldn’t be bothered with the gym today – I felt like today was a day to do a spot of baking.

I just wanted to do something small which required minimal effort so what better than cheese scones!

Scouring an abundance of websites for a recipe that was straight forward and didn’t add extras such as a ‘fine English mustard’ or some kind of smoked meat, I opted for a simple BBC recipe (link at the end of post)

They’re quite delicious, but not that cheesy. I may have needed to use a stronger cheese to be fair, or maybe just add more to the recipe as I thought it seemed a low quantity. 

I must admit I didn’t follow the recipe exactly to factor in the issue of being unable to find the cheese grater so I ended up finely chopping the cheese – I prefer to say I used a ‘rustic’ method, just to make it sound better. Also, I decided to cut the scones into triangles with a knife rather than use the round cutter as suggested.. Rustic.

Next time I make these I’m definitely going to make them a bit more cheesy but as I said before, they are still delicious.
